The recipe of the month is a Farro Caprese Grain Bowl. I chose this recipe because it is pretty easy to make and affordable. This one bowl is loaded with essential nutrients, such as protein and fiber, that you need in your diet and is satiating. Intuitive eating is connected to have a healthy relationship with food and this recipe helps you learn to appreciate all of the textures and flavors it contains. As it states in this month’s newsletter, being intuitive while eating means to eat when you are physically hungry and stop when you are full. 1 cup farro, cooked according to package directions
1 cup of cherry tomatoes, halved
4oz fresh mozzarella cheese, cut into half-inch chunks
¼ cup loosely packed fresh basil, torn
1 cup arugula
1 avocado, chopped
1 teaspoon fresh ground black pepper
4 ounces balsamic vinegar
2 tablespoons brown sugar
- Toss together the cooked farro with the rest of the grain bowl ingredients.
- To make the glaze, add balsamic vinegar and brown sugar to a small saucepan and stir to combine. Heat saucepan over medium heat until mixture begins to boil, stirring frequently until sugar has dissolved. Reduce heat to low and summer until the glaze is reduced by half, about 10 to 15 minutes.
- Drizzle glaze on top of the grain bowl. Any remaining glaze can be refrigerated in a sealed container for up to two weeks.
