Ingredients:

  • 2 tablespoons olive/preferred oil
  • 2 medium potatoes
  • 1 medium onion (chopped)
  • 2 small zucchini (shredded)
  • 4 sausage/desired meat links (½ inch slices)
  • ½ cup of roasted sweet red peppers
  • 6 cherry tomatoes (quartered)
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ cheddar/preferred cheese
  • 4 large eggs

Directions:

  1. In a large skillet over medium heat, add your potatoes and onion and cook until the potatoes are crisp/tender. Add in the zucchini and sausage until tender
  2. Slowly incorporate the red peppers, tomatoes, salt and pepper and sprinkle in the cheese.
  3. In the skillet, make 4 wells with the back of the spoon, and crack an egg into each one. Reduce the heat to medium, cover and cook until egg whites are set and yolks start to thicken
  4. Serve and enjoy!
